Laura,
You should be able to find Xantham gum in Whole Foods or any Vitamin/Health food store - I don't think it's at any of our regular grocery stores yet though. I am not sure about the mint extract though- I know sometimes I think spearamint may taste nice instead of peppermint in recipes and it backfires big time- though I think most mint extracts actually are peppermint!

Hi - I love your website! I am just curious as to where you get xanthum gum, is it easy to find? Can you substitute mint extract? thanks!

It's on my list to order another bag of Honeyville flour today (I'm out, sadly!), and when I receive it, I'll be making these cookies immediately! Oat flour and almond flour is the perfect combination--and you are the one that thought it up! Nice work! These sound so perfect, I can't wait to give you a full report!

Thanks! That's nice to know you've made some of my stuff and are still reading new recipes:) I buy the Honeyville almond flour whenever it's on sale- and it lasts forever so it doesn't seem so bad- since I don't like the consistency of almond flour alone usually. In this recipe- I'd just half the oat and almond flour (3/4 cup each) and hopefully it works out okay? If you dont' care about gluten- try replacing it with spelt flour. Let me know if you try something and it works! (or if it doesn't!)

Hi Ann, I really love your blog and the recipes you post always look amazing! And the ones we've tried, we've loved, too! I had a question, though. Almond flour tends to be expensive, whether you buy the flour or grind the almonds yourself. Do you know of anything that tends to be a close substitute that won't compromise the taste and texture too much? Just wondering. =o) Thanks!
