Steph, sigh, I knew it would happen. Should've axed the chocolate and used cream cheese frosting.
Lisa, just the smell of the coconut milk mixing with the pumpkin and maple is fantastic.
Jackie, chustnut puree sounds interesting! I love chestnuts but maybe I'd also add pecan to it along with a tad bit more maple sugar and coconut milk. Let me know if you make it!

Oh this looks so finger licking good! That's also a wonderful sweet treat for Thanksgiving. Do you think I could make this cookie with a different ingredient than pumpkin? How about sweeten chestnut puree?

This sounds like a delicious mix of ingredients! I'm a pumpkin fan, and it's so good with coconut milk and nuts, and the maple sugar sounds great.

OH my gosh! You have to make pumpkin whoopie pies for your mock Thanksgiving meal, excellent itdea! Just omit the chocolate and walnuts and maybe add some more oil or coconut milk! Regarding the chocolate, serioiusly, take it or leave it, I just love chocolate but it's really not necessary in the cookies but still works. I just finished off some more chocolate a few hours ago so I guess I'm on another chocolate kick. Sigh.
